Our bodies require salt and will die without it. Salt makes many foods taste better. Salt is a preservative too. Jesus is telling the faithful people that they are needed in God's world, and not to lose their "saltiness." What other image could he have used?

In these sayings Jesus is telling us not to pay back evil with evil. Instead, we are to patiently show our enemies that we have the love of God within us.
